Zephyr, Rahat-lukhum, Marmalade

Zefir

Zefir is a type of  sugar candy made from fruit and berry puree with added sugar and egg white. It originated in ancient Greece, where it was named after an ancient god.

Rahat Lokum

Rahat lokum has a Mediterranean origin and literally means “sweet made of sugar.”It is made of starch gel and sugar. Premium varieties consist largely of chopped dates, pistachios, and hazelnuts or walnuts bound by the gel; traditional varieties are mostly gel, generally flavored with rosewater, mastic, Bergamont, orange and lemon.

Marmalade

The Romans learned from the Greeks that quinces slowly cooked with honey would "set" when cool (though they did not know about fruit pectin). Greek melimēlon or "honey fruit"—for most quinces are too astringent to be used without honey, and in Greek "mēlon" or "apple" stands for all globular fruits—was transformed into "marmelo."Marmalade appeared in Europe as a result of crusades, during which crusaders introduced sugar to their countries. Once introduced to sugar the French invented Marmalade.
